January is the time for discussing healthy snack options, so I’d like to introduce you to my favorite: air popped popcorn. Popcorn is pretty much the snack food in our household so our microwave air popper gets a whole lot of use. Popcorn is a naturally healthy snack – low calorie and high in fiber, though it’s made unhealthy by the loads of preservatives in a standard bag. Sure, slathering it in your own melted butter isn’t ideal either, but everything in moderation, right? Without further ado, here’s three of my favorite popcorn toppings to create a half-healthy, half-indulgent treat. These portions are based off of the yield from about 1/3 cup of kernels.
Butter & Truffle
2 tablespoons melted butter
Truffle salt, to taste
Cinnamon & Coconut Oil
2 tablespoons melted coconut oil
2 teaspoons ground cinnamon
Salt, to taste
Chocolate Marshmallow Drizzle
15 large marshmallows & 1 tablespoon butter, melted together
10 ounces dark chocolate, melted
Sprinkle of sea salt
Tip: spread the popped corn in a single layer on a baking sheet lined with parchment paper. Drizzle the chocolate and marshmallow over top and chill for about 30 minutes, until set.
