So maybe you liked the sound of my Almond Fig Scones, but are trying to be health conscious? Good news – today’s recipe is essentially the salad version (and you know I love a good salad). This is the perfect way to finish off the final figs of the season, and get a little more burrata into your diet at the same time.
It’s such a simple little salad, but the combination of flavors is out of this world, and it goes great with chicken or steak on top too.
Fig, Almond & Burrata
Adjust the quantities according to taste, and easily multiply this recipe to serve a group!
- Balsamic vinaigrette
- Mixed greens or arugula
- Slivered almonds, toasted
- Dried figs, quartered
- Fresh burrata (I use about 2 ounces)
- Freshly cracked pepper
Select your favorite balsamic vinaigrette, or whisk together a mixture of balsamic vinegar, olive oil and salt in a small bowl. Toss the greens with a small amount of dressing, until evenly coated, and top with remaining ingredients.
Refine Cooking Tips
- You could definitely use fresh figs instead, I just prefer the texture and taste of the dried ones.
- To evenly coat my greens, I toss them with the dressing into a large ziploc bag and shake.
