Happy Friday! Today I’m bringing you some inspiration for a quick and easy brunch that won’t leave you holed up in the kitchen while the rest of the group enjoys their morning cocktails. Cooking for a group can be so time-consuming and quite stressful if you don’t have the free time to spend prepping everything in advance. These photos are actually from our Mother’s Day this year, where we hosted brunch for the family. I was busy the night before and left with only a few hours in the morning to prepare, so I knew I needed to opt for something simple but still impressive enough for a holiday spread.
Enter the “waffle bar”. Everyone gets to serve themselves up waffles and choose whatever combination of toppings they want, ranging from healthy to indulgent. With the addition of a Bellini on the side, there’s really no complaints to be had. I spent a little time preparing toppings and whipping up two different batters (one buckwheat gluten-free and one regular buttermilk), and then it was as simple as cooking as many waffles as I could before the meal started. As I completed each waffle, I transferred it to the oven (set to 200 ) to stay warm until we were ready to eat. Important tip: rather than stacking your waffles on a plate and letting them get soft and soggy, lay them in a single layer on cooling racks in your oven so that they maintain their crisp outer layer.
The end result was a festive brunch that came without hours of preparation beforehand, without the stress of cooking five different dishes at once, and without a thousand pots and pans to wash afterwards.
