Happy Wednesday! Today I’m bringing you a little inspiration for an easy, laid-back (but still festive!) Cinco de Mayo celebration. Most of us don’t have the time, money, or energy to plan, shop, and cook for each and every holiday that comes along, but as someone who loves any reason to decorate and celebrate, I don’t think that should stand in our way. With just a few festive purchases and minimal prep work, you’ll be ready to relax with a cocktail in hand.
Create a simple nacho bar by setting out all the necessary toppings for each guest to build their own plate. To keep it healthy, I chose Late July multigrain tortilla chips, and added a basic homemade taco seasoning to shredded roast chicken for the base. Beyond that feel free to offer whatever toppings you prefer! That could mean anything from shredded cheese and guacamole, to sliced jalapeños and pomegranate arils.
Last, but certainly not least, make sure you prepare a killer themed cocktail. The obvious choice here would be a classic margarita, but I decided to make refreshing grapefruit Palomas. If you love grapefruit as much as I do, you’ve got to try them.
